For all of you there at the 2014 Turkey Mayhem Boot Camp, Gina brought these filling treats after! YUM!
Chocolate Coconut Protein Bars
-2 cups steel cut oat
-1/2 cup natural creamy peanut butter (coach Nicole use almond butter)
-2 very ripe bananas
-1/2 cup dried coconut – shredded (i use unsweetened)
-1 tbs cinnamon
-2 scoops Whey vanilla protein powder (I use chocolate). Also this step is optional but when i don’t use this is doesn’t fill me up as much
-1/2 bag organic dark chocolate chips
-1 tbs vanilla
-milk/soy/almond milk (use a dash or two if necessary)
-In large mixing bowl, combine all ingredients except for chocolate.
-mix ingredients until fully combined
-In 9 x 12 pan, flatten mixture to fit pan (I usually line the pan with saran wrap or foil for easy clean up
-in a sauce pan, melt chocolate and then pour over oats mixture
-let stand until chocolate hardens or place in refrigerator/freezer
